Or any of the states east of Bihar, really. I've never heard much about the cast system there besides the Brahmins and Kayasth

Used to be, key word "used to". They fell from grace like Jatts and Dravida. Chora lineage of original Kshatriya did exist once. Not much is documented on what happened. Some theory is Buddhism made them weak, but I feel like that was just Brahmins scape hosting it, even if their was some truth to it.

Interestingly Utkala (Odia) Kshatriyas do exist to this day. Vanga Kshatriyas (Paundraka) didn't. If i remember correctly there were a few rajbonshi, but their is no clear evidence of how they were gone

Outside aryavarta heartland, you will hv tough time fitting regional jatis into traditional 4 varna system. Various social divisions existed in every society but not every society chose to go for fourfold classifications system. In sindh, you had just brahmins, lohanas and bhatias. In kashmir, you had gors(gurus), zutshi(astrologer), karkun(officials), wanis(traders), watals(scavengers) and others. In south you had just brahmins, sat shudra and shudra. Ofc these societies too had hundreds of occupational specialisations and people doing dirty jobs like scavenging. They existed on fringes and just cared not to create a fourfold classification system like aryavarta cultural sphere did.
