start with the most popular ones, i guess? I mean, that's what I did. I watched doraemon, pokemon, and shinchan as a kid before moving to Naruto and Bleach. I would say few arcs of both are very good, so definitely watch those. After that there's famous anime like AoT, HxH, FMA, Cowboy Bebop etc. you can choose to watch. There are many good anime, I would recommend exploring a bit of everything without getting tied down to any one genre.
But i'd say the most "soulful" anime I've seen till date was FLCL. It's 6 episodes and is pretty different from most anime, tbh. I'd call it art
