That's factually untrue yaar, a lot of Halwai and Chat Wala with popular stalls and joints are all Pandits. Some are Vaishya as well.

Ajino Moto. That's it. Ajino Moto and food colouring. They put a fuck ton of that in everything. That's why you can't replicate that taste at home with actual fresh spices. You never will.
Every street slop, wedding slop, restaurant slop, all of it, just has fuck tons of Ajino Moto in it. Only case where I haven't seen it being put in is the Handi Chicken that I get from a very small stall I know. That also happens to be the tastiest thing I've ever had in my life.
But yeah, if you want your home food to taste like street slop, just add Ajino Moti and fry it in old, used oil.

MSG claim is not true, while they do add it, MSG doesn't alter the essence/fragrance of the food nor do every vendor knows about it(hence some foods tasting literal slop tier in streets and some don't)

It's not Kanging anon, everyone knows that in the most traditional families, Brahman are limited to very specific job roles. This means they can only feed people, fight people or teach people.
As a result it is not unexpected to see stalls that say "Pandit Ji ke Chole Bhature" in some regions. I do not care about their societal status, I only and only care about their Varna. In this context I don't even give a shit about their caste as long as they are cooking good food.

This is the case for my place as well. I enjoy the biryani and kebab paratha that is made by a local muslim chain. He gives me special discount and let's me try something for free everytime he will add something new to menu kek.

I have found some NE people who make some excellent chilli potatoes, Thukpa as well as some insanely good momos. I have been enjoying them ever since.

I actually agree because, if you were familiar with some regions dominated by Tyagis and Gujjars, you will see popularity of Soya Chaap and biryani thanks to their dietary preferences. One of the best veg-soya chaap biryani I have ever had was made by a Muslim stall owner.
He claimed he understands what a biryani is supposed to taste like and it helped him make the perfect veg biryani.

like I already said i don't like eating food outside. I rarely eat outside to try new sounding dishes from a newly opened restaurant but almost all of them turn out to be mediocre. I think I have grown out of Indian cuisine in general.
I would like to try authentic mediterranean, persian and kashmiri cuisine but there are no such restaurants in my city.
