I am living alone and Don't have a colander to strain. I always have to cook in pressure cooker in which the veggies lose their texture.

Boil veggies in pot and use a sikua/jhara or a sieve to strain everything in batches. That does a good enough job too.

How do you prevent the chicken breast losing all its water and going dry in the pan while cooking? Also, how do you prevent undercooking.

I don't really care about dryness of chicken breast.
Mai bus pakata hoon dono side pe , usually wo normal cook ho jata hai
Uske baad mai usko side mai daal ke usi pan mai sab kuch daalta hoon like tomato , onion and capsicum
Phir rice daala , usually a pinch or two of garam masala
Uske baad chicken stock daal deta hoon
From there i give 5 cups of water and let the rice and chicken cook
If it's dry idc , I wanna to get my protein.
My rice and chicken don't have that much spices and flavour
