There is nothing wrong with appropriating in polytheistic religions. Thats precisely how polytheism work and why it is so tolerant unlike monotheism. And appropriation goes both ways. Clans also appropriated hindu gods and practices.

In NW india shudra agro-pastoralist communities themselves have been vegetarians and anti-beef for generations. This is why NW india has highest share of vegetarians. The dynamic might be different in south and east india where vegetarianism distinguishes brahmins from shudras and tribals but vedic culture is deeply rooted in psych of the common folk NW india (as sindhu sarasvati region was its birthplace and west UP was birthplace of Vrishni heroes).

OTOH, in places like Kashmir, himachal even brahmins eat goat meat and bengali brahmins consume fish.

Depends on culture. NW indian pastoralist groups like shudra jats and gujjars are vegetarian(likely due to their pastoralist background and the fact that NW india was the hotbed of vedic culture and rama krishna worship). OTOH bengali brahmins consume fish as it was staple in bengali cuisine and persisted despite vedicisation.

So are certain brahmin groups. Vaishya and shudra groups also choose to be veg. It is dictated by culture. Hinduism isnt a centralised religion. Very few taboos such as beef taboo are universal to hindus.
