Nope. It has nothing to do with utilatarianism.
People uesd to sacrifice horses. Imagine burning down your BMW. That's the damage that you do to yourself if you sacrifice a horse in 2000 BCE.
That's what sacrifices are in Rig Veda.
There is no such thing as a cow sacrifice.
Raising, taming, producing good horses is btw much harder than producing good cows. Cows don't even move by themselves you have to drive them.
The argument people were forbidden from killing cows because they were too useful is simply wrong.
