How is Sanskrit studied in India? I suppose that if you're the son of a pujari that you would learn it at home from a young age? And I see there are Sanskrit colleges and universities for formal study, in addition to those is rudimentary Sanskrit part of the primary school curriculum? What kinds of textbooks and course materials are used for formal study? What writings are students first tried with?
When I was younger I tried learning Sanskrit with old western materials, Perry's Sanskrit Primer and Lanman's Sanskrit Reader. I didn't reach competency and I gave it up when my free time was reduced, but I've been thinking about starting again, and wanted to seek advice on how it's taught successfully.

Sanskrit is taught at nearly all schools in addition to (your state's language) just like how americans learn Spanish or another foreign language with English. Students at state government schools (aka schools that follow examinations set by the state of Kerala, or UP, Bihar, etc.) study it from primary school (first grade) up to the 10th standard Matric exam and we can choose to either study it further in +2 for the Inter exam or drop it.
Central (federal-operated) government schools and private schools that follow CBSE (the Central board in Delhi) on the other hand, introduce Sanskrit only in 6th standard and beyond.
Private schools that follow the ICSE curriculum are a mixed bag. Most choose to teach Sanskrit from class 1 itself but there are a few exceptions (Convent schools in particular).

They are usually published by the board, owned by the department of education of that state. In the case of ICSE, books are published by private publications.

we don't have writings to read through the year the way students of Latin or Ancient Greek do tbh. We do study a few old poems (excerpts from Kalidas), prose etc. to prepare for the board exams in later years and of course, most people studying Sanskrit will get to read texts like अर्थशास्त्र, or religious texts.
I would recommend trying to learn Hindi and the Devanagari script before Sanskrit, it gets a lot easier in case you are stuck

What I'm trying to say is ime theres a lot more resources for learning Sanskrit if you know Hindi or another Indian language. If you don't plan on it, it might take a longer while

In the North, even if you go to a private school, you have to take Sanskrit. I remember being forced to study it in Gurgaon

I shifted to igcse at the end of 9th and as a consequence I had to leave Hindi and Sanskrit. I had to settle with french and german from scratch instead
