You will need an big ass antenna because esp32 have very short wifi range.
Get a yagi or omni-directional sma antenna.

Depends on configuration but just flooding the multicast might block the wifi from atleast a few floors

Simply flooding the gateway might also work but most probably not.
Also change your device hostname to something non identifiable.
