Okay so

Prepare these:

1. Coffee powder, nescafe stuff is fine. Picrel is fine.

2. A ceramic cup (metal reacts weird in my experience)

3. A spoon (can be metal though)

4. sugar

5. some boiled water (should be hot)

6. milk

7. something to boil milk in

8. stove

Now

1. Take the ceramic cup, put in 3-4 teaspoons of coffee powder in it.

2. put in half a teaspoon of sugar

3. This is the important part that will make it or fuck it up for you.

Put a few drops/less than even half a teaspoon of that boiled water. Don't add too much! Too little water can be fixed.

4. stir it

5. keep stirring it

6. keep stirring it till it becomes a brownish paste

7. if required, add a few drops of water (drops) and stir it

8. your hand will hurt by now, but keep stirring till it becomes a light brown paste that's THICK.

Basically you want a lot of air inside it and want to make it consistent.

9. Now take the spoon out and scoop rest of the paste on the spoon back into the cup. It should rest in the cup.

10. Boil the milk now. Don't heat it till ufaan aana. Just enough to make it hot (assuming you already heated it before and it's not raw)

11. Now, very carefully, making sure you don't burn yourself, pour the milk directly onto the cream-ish paste you made with the coffee in the cup. Just enough to fill the cup.

This is the South Indian coffee style.

Makes your hand hurt but you get a nice foamy coffee.

Adjust the powder and sugar according to taste on later attempts.
